Low carb & lovin' it
Niki's waffles
2 eggs
1/4 cup milled flax
1 TBLs oat bran
1 TBLs olive oil
1 tsp grade B maple syrup
Mix all ingredients, throw it in a waffle press. Impress your loved ones with waffles that don't taste nearly as bad as they look & are healthy ;)
For this bad boy I did not measure the ingredients, I am bad like that but it tasted amazing. I made it for my lovely Michelle, aka Aunt Michelle.
Spin Dip contains spinach, parm, pepper jack, asiago, mozz, sour cream & mayo... it's as though the angels sing and the gates of heaven open just me as I slowly pulled it out of the oven. (can you sense my sarcasm?)
Spinach Dip Stuffed Portabella Caps
"stuffing"
pulled chicken
Portabella caps
fresh chopped spinach
fresh garlic
low fat parm
2% swiss cheese
light mayo
salt & pepper
I created this dish for the South Beach dieter in mind.
First be sure to clean your caps of the gills and stems. Lightly spray with oil and place on a baking sheet. Mix all ingredients above and fill caps. Bake at 425 for 15 min, and broil for extra browned tastiness.
No carb French toast:
"bread"
1/3 cup flax meal
1 egg
2 Tblsp olive oil
1 tsp baking powder
pumpkin pie spice
vanilla extract
Mix all the above ingredients together, pour into a microwave ready pan. Microwave for 1 minute, allow to cool.
for the batter:
1 egg
2 Tblsp fat free half & half
pumpkin pie spice
vanilla extract
Dunk in batter, fry on hot pan using stick free spray. I topped mine with light earth balance and honey roasted sunflower seeds- DELISH!
Green Berry Smoothie
1 cup mixed berries
1 cup soy milk
3/4 cup chopped raw kale
1/2 cup water
Place all ingredients in the vitamix or blender
Pumpkin Bake
8oz cream cheese, softened
5 eggs
1/2 cup sweetener of choice, or a couple packets of Stevia (taste often to sweeten to preference)
canned organic pumpkin, unsweetened (15 ounce)
vanilla extract
pumpkin pie spice
cinnamon
Combine all ingredients in a blender. Pour into prepared baking dish. Bake at 350 until puffed (about 40 mins), check to make sure it is done with a toothpick. Allow to cook, cut and enjoy.
Turkey sandwich, Min. flax "bread" and creamy broco-slaw
"bread"
1/4 cup flax meal
1 tbsp margerine or oil of choice
1 egg
1 tsp baking powder
pinch of salt
Mix all the above ingredients together, pour into a microwave ready pan. Microwave for 1 minute, allow to cool.
add your favorite sandwich ingredients & brown on a non-stick pan.
The slaw is just pre packaged broc-slaw with a low calorie ranch.
Califlower Pizza Nicole Style
"pizza dough"
2 cups frozen cauliflower
2 cup shredded lowfat mozz
2 eggs
dried orgenano, parsley, chili flakes and assorted italian spices
salt & pepper
Thaw frozen cauliflower. Throw all ingredients in Vitamix, food processor or blender. Pulse until coursely chopped. Pour into a bowl and mix throughly. Pour onto a sprayed baking sheet and bake at 450 for 15 min. Flip over crust and cook an additional 4 min.
In a pan cook shrimp in some light butter with garlic and parsley. Cut turkey bacon and cook in small strips. Add cooked ingredients on top of pizza. Scatter a small amount of shaved parm and broil til' golden brown.
